With baffle style commercial grease filters, the baffles obviously need to be installed vertically in order to collect the grease which is generated from cooking in commercial kitchens and the tray for the collection of the grease needs to be angled sufficiently to take the grease away from the cooking surfaces and to a location where it can be easily removed.
